5 minute courgette salad

This is my go-to refreshing summer salad, perfect to go with a BBQ or accompany your main show stopper, and a great way to use up all those courgettes in your fridge or garden.

You'll need:


2 courgettes (try and get a yellow and a green one for great colour)

1 small chilli 

1/2 garlic clove

1 large lemon

5 sprigs mint

1 tbsp Extra Virgin Olive Oil

Pinch of salt

Method:

  1. Peel your courgettes into ribbons, get as much off it as you can, and then chop the last bits up and place in a mixing bowl.
  2. Add the olive oil, salt and lemon juice and massage the courgette
  3. Finely chop the chilli and mint, and add to the bowl. If you have a microplane use to grate the garlic, otherwise finely chop or use a garlic press. Season to taste.
  4. Mix altogether and place in a large salad bowl. Grate the lemon zest over the top to finish!
