Cauliflower Dal
One of our absolute favourites at the deli, it’s deliciously warming and creamy. So easy to make, and once all the ingredients are in you can just leave to simmer until the lentils are softened and flavours have developed.
You'll need:
1 white onion, diced
2cm cube ginger, grated
1 red chilli, finely chopped (add more if you like it spicy!)
2 tsp cumin
1 tsp garam masala
1 tsp turmeric
1 tsp mustard seeds
500g puy lentils
1 large cauliflower
1 can coconut milk
250ml vegetable stock
Method:- Heat a large saucepan over a medium heat, add a dash of olive oil and wait until it is hot
- Add the onion and reduce the heat so it slowly cooks and turns translucent (this can take 5 - 10mins)
- Add the spices and chilli and cook out for 2-3 minutes
- Add the cauliflower and lentils and stir through the spices
- Add the coconut milk and stock, simmer on a low heat for 20 - 25 minutes until cooked
