Kimchi Inspired Summer Slaw
You'll need
1 Kohlrabi
2 Carrots
1/4 White cabbage
1 Fennel
3 Spring onions
25g coriander, roughy chopped
50g Rocket
1 lime, juiced
2 tbsp sesame
For the dressing
1 Chilli, deseed and finely chopped
1 garlic clove
1 lime, juiced
2 Tbsp olive oil
Method
This is much easier (+ faster!) if you have a magimix, but it doesn't matter if you don't!
Finely shred the kohlrabi, cabbage and fennel; and grate the carrots. Put all the fresh ingredients together in a bowl. Add a pinch of salt and lime juice to soften the veg slightly.
Heat a pan on medium heat and dry fry the sesame for 10 minutes to toast.
For the dressing, add all the ingredients into a blender if you have it, otherwise mix in a bowl.
Add the dressing to the slaw. Transfer to your salad bowl and top with the toasted sesame seeds.
